Broccoli Salad

Broccoli Salad (4 persons- side dish) – works well as lunch as well :)  

  • Two heads of broccoli (800-1000 g)
  • ½ L sour cream
  • 2-3 dl raisins
  • 200-300 g bacon in cubes
  • 1 dl sunflower seeds
  • 1 small red onion
  • 1 table spoon lemon juice
  • Salt, pepper

Put water on the stove, when the water is boiling turn off and put in the broccoli. Leave in the water for 15 min.

Fry the bacon on a hot pan, and dry on paper towel.

Mix sour cream, raisins, onion, sunflower seeds lemon juice, bacon, salt and pepper in a big bowl.

Add the broccoli when it’s cooled off and mix well.

Baby Blanket, blocks

So here we go again, another crochet project, another blanket. I needed a “little” project and fell for the vibrant colors of the yarn. It’s made of 100% cotton. It consists of many little squares, in 4 different colors. The squares are made 10,5 x 10,5 cm. (24 chains, and then just sc to the top) . It’s great therapy, making one square per day! :)

Potato Salad and Fish Balls

I just have to share this recipe of potato salad because it’s healthy, easy and taste wonderful. The Fish balls are also delicious and a must-try, but they are not fancy at all (like non of my recipes) but they are very delicious considering the amount of ingredients!

Potato Salad

  • 1 kg potatoes (preferably small ones as they have more taste)
  • 500 g Junket or Fromage Frais
  • ½ table spoon dijon mustard
  • 2 cups chopped chives
  • salt and pepper
Boil the potatoes and peel the skin off. It’s very important that these cool down, so put in fridge. While they are in there, mix the fromage frais  with ½ tablespoon mustard (be careful with it, as it has a very strong taste) add the chives and taste off with salt and pepper. When the potatoes are cool, add them with the dressing and mix well. I usually put sliced potatoes and cucumbers on top as a finish, and this tastes very well.
Fish Balls
  • 400-500 g of minced fish
  • 2 cups parsley
  • salt and pepper
  • olive oil or a little bit of butter
Mix fish meat with parsley and salt and pepper and form into balls. I usually make them 2 cm thick and about 4 cm in diameter. Fry on a non stick pan with a little bit of oil or butter.

Oven Pasta

This is a delicious alternative to lasagna. The ingredients are basically the same, but it needs less time in the oven, and most people have some sort of pasta in their house, making it very convenient. It’s not very Italian, but it taste nothing more but incredible! … You can also save leftovers and eat for lunch the next day.

Oven Pasta:

  • Pasta (fuscilli or butterflies)
  • Grated Parmesan cheese
  • Mornay sauce (or bechamel sauce)
  • Vegetables (I used ½ carrot, ½ bell pepper, 100 g corn and quarter squash for 2 persons but you can also add whatever leftovers you have ex: eggplant)
  • Ragú

Quick Ragú

  • ½ onion
  • olive oil
  • 1 bottle of salsa (approx. 500 g)
  • 400-500 g of minced pork or veal
Cook the pasta according to the package. Make the quick ragú by chopping the onion and heat with olive oil, then add the meat and brown it. Finally add the bottle of salsa and leave on medium heat for 15 min.
Take an ovensafe dish and put the meat and the pasta together. Mix with the chopped vegetables and Mornay Sauce. Put in oven 15 min and serve with Parmesan cheese.

Halstørklæde med Knap

Jeg er altid fascineret af dem som kan strikke og jeg ville så gerne   lære det. Men min tålmodighed løber hurtigt ud med mig, og jeg gør aldrig projekterne færdig. Så jeg satte mig ned og tænkte over et     projekt som var hurtigt, forholdsvis billigt og lige til som absolut ny- begynder.

Det var meningen at det skulle være et langt halstørklæde, men så     blev jeg træt af at sno det om halsen 100 gange og min mor som           arbejder på Odense Universitets Hospital fortalte mig om hvor             mange (især børn) der bliver kvalt i det fordi halstørklædet kommer i     klemme i cyklen. Det fik mig på andre tanker. Et kort halstørklæde     med en knap.

Jeg har brugt Eskimo Garn fra Garnstudio. Noget virkelig lækkert        uld der hverken kradser eller koster kassen.

Jeg slog 20 masker op på pind 10. Så strikkede jeg rib. (2ret, 2 vrang) indtil det var langt nok.(Det er dejlig elastisk og på mode i øjeblikket)

En ting jeg lærte i processen var hvordan man skulle vende

. Jeg havde læst at man skulle strikke ret over vrang. Da jeg ikke havde fattet at det jo er modsat når man vender, så strikkede jeg ret over ret og vrang over vrang, og det blev til noget være gøgl.

Så hvis du aldrig har strikket før så gør som følgende:

  • Slå 20 masker op på to pinde. (Så er maskerne løsere). Vend.
  • Strik 2ret, 2vrang pinden ud. Vend
  • Slutter du med 2 ret skal du starte med 2 vrang. Slutter du med 2 vrang skal du starte med 2 ret.
  • Når du skal afslutte den fine sag, så sørg for at maskerne på den sidste pind er meget løse.

Goulash


Long time since an update, but finally I have some time to sit down and write this fabulous recipe. It’s not fancy. Like all my other recipes it’s not full of weird ingredients that cost you a fortune and you never use again. I prefer simple old-fashioned recipes. Some call them boring- I call them classics.

The recipe is from an Albanian cook, and it’s just so perfect.

  • 1 baked potato in cubes
  • 2-3 carrots in slices
  • ½ eggplant in slices
  • ½ squash in slices
  • ½ onion chopped finely
  • salt, pepper, paprika
  • 2 tablespoon concentrated tomato puree.
  • water
  • ½ kg veal meat in cubes.
  • 1 tablespoon olive oil
In a pan fry the onions in the olive oil and add the meat (stir well). add the vegetables. When fried, pour into a big casserole and add remaining ingredients. Boil at minimum heat for 40-60 min.

Hot Pot Mat

I made this Pot Mat using Felt balls. (In denmark these can be bought at Kvickly and on this website )

I would have bought 2 packages for 1 pot mat, but unfortunately Kvickly only had one package left. But it actually works ok as it is. It’s the world’s easiest recipe, just sew them together using needle and thread. It took me some tries because I didn’t want the thread to show, and I found that connecting them one line at a time (line 1) was best and then stitch them together like zig zagging (line 2). (See drawing below)

Mor’s gryderet

I anledning af en vidunderlig konkurrence viderebringer jeg denne fantastiske opskrift som kommer direkte fra mor’s køkkenskuffe:

  • 500 g Oksekød i tern
  • 1-2 fint snittede løg
  • 3-4 skiveskårede gulerødder
  • 2 oksebouillion terninger
  • 250 g madlavningsfløde (må kunne erstattes/undlades, skulle man være mælkeallergiker *g*)
  • 2-3 dråber madlavningssoja (evt lidt kinøjser soja og sukker hvis det smager af for lidt)
  • evt grønne bønner (det mætter alt sammen)
  • Hjemmelavet Kartoffelmos :)

Jeg bruner 500g oksekød i tern. smider  løg op til det brunede kød og bruner det også. Så putter jeg gulerødder i og hælder vand på til det akkurat dækker kødet + bouillon terningerne. Lad det simre så til kødet er mørt. Hvor længe kommer an på kødkvaliteten. Jeg plejer at regne med 1½-2 timer. Hvis det er det allerfineste oksekød skal det jo have noget mindre. Når kødet er mørt hælder jeg madlavningsfløde eller alm. fløde op i gryden. Bringer det i kog og jævner det med en meljævning lavet af mel og mælk og giver det nogle dråber madlavningssoja for at få den brune farve. Hvis jeg synes det smager af for lidt supplerer jeg med noget kinesisk soja og lidt sukker – det plejer at hjælpe. Nogle gange har jeg også kommet grønne bønner i – det kan jeg selv godt lide.
