Beautiful- emotional.

This is an experience that is so wonderful. I cannot describe the feeling when seeing the heart beat for the first time. <3 The love was definetly there and even my bf squeezed my hand so much, and was fixed to the screen. :) I could watch the screen for hours, seeing how it moves, how it’s shaped, how beautiful and so small it is.

So the verdict was that it’s a lazy baby, or maybe it was just sleeping because if didn’t want to turn so we could see everything… finally after poking it constantly five minutes, it got annoyed and turned the back on us LOL.

Don’t know what gender until the end of October… This is so exciting though!

Brun Sovs (Gravy)

Being responsible for two exchange students, I decided to invite them over for dinner with a traditional Danish meal. The menu was:

  • Medisterpølse (Cumberland sausage) with new Danish potatoes, homemade gravy and red cabbage.
  • Homemade applesauce with macaroons and homemade whipped cream.
Medisterpølse: is not something you will typically be served when eating danish food for the first time, but unlike that typical food this is something you will have during the week, and not for christmas or other feasts. I boiled the medister for 5 minutes before frying it on the pan 15 min with a bit of butter.
New potatoes: shouldn’t be peeled, but rather just washed thoroughly, and then boiled with the skin to preserve the vitamins that are just under the skin, and the wonderful taste that comes with it.
Red Cabbage: I bought this already done, because i think this taste better (less bitter/sour) than if I done it myself. If you cannot buy this at your local supermarket, you can make it yourself, many good recipes are on the internet.
Gravy: I made gravy for the first time in my life, and it worked out fine (it tasted perfect!) follow the recipe and you won’t regret it! 
  • 2 tbsp flower
  • 25 g butter or margarine
  • 1 dl milk
  • 1 stock cube dissolved in 2 dl water
  • 1 tbsp cream
  • salt : pepper
  • Brown colorant (optional)
Melt the butter in the pan and put the flower in, mix well so there are no clumps in it. When smooth, add milk and water. Add cream, salt, pepper and colorant.  Keep boiling gently until you have the right consistence, if too thick add a bit of water.

Spinach Pie

Spinach Pie

This recipe is just so easy and it tastes wonderful. Even if you are not a big fan of spinach, you just substitute frozen spinach to fresh spinach boiled 2 mins. It won’t have the same strong spinach taste but it will have all the vitamins and more as the frozen. I always prefer fresh vegetables to frozen but sometimes its cheaper (but not easier) just to have the frozen. I had a packet of spinach in the freezer that i needed to use, so that’s why this particular pie is made with frozen, even when it taste better with fresh.

The awesome thing about pie, is that you can add almost anything you have in the fridge. Leftovers, meat as vegetables, and once in the oven, you don’t have to do anything for the next 40 min!

Quick Homemade Spinach Pie

  • 1 portion pie dough (I bought it ready made from the grocery store and that works fine)
  • 400 g frozen spinach or 500 g fresh spinach
  • 250 g bacon in cubes (or can be substituted with ham in cubes or fried salmon for a healthier version)
  • 2 eggs
  • 3/4 cup (2 dl) milk or cream(I use half milk, half cream for a healthier version)
  • 4 big potatoes or many small ones. 
  • salt and pepper
Preheat oven to 200*C.
Defrost the frozen spinach and drain for water or put the fresh spinach in boiling water for 2-3 min  and drain
Fry the bacon and dry with a paper towel.
Cut potatoes in quarters and boil.
Put the pie dough in the pan and pinch with a fork, then pre-bake 8 min.
Mix spinach, bacon, salt and pepper and milk. Add eggs at last and mix well. Add mix into the pan.
Put the potatoes in between, scattered evenly.
Bake 40 min or until the pie is no longer liquid. :)

An Apple a Day…

An Apple a Day…

What’s worse than finding a worm in an apple?
- Half a worm.

Went to my parents house, and they have this BEAUTIFUL enormous apple tree. So, with rainboots on, bucket in my hand I go and pick up lots of apples. Well this day I didn’t pick so many because we’re about to go on holiday, but i couldn’t help myself getting just 1-1.5 kg.

And I did get worms alright. I peeled the apples and cut and sliced them, some inhabited. But it’s ok, afterall I just picked up the apples from the ground, and they just go out with the trash.

Just made two things; an easy applepie, and apple sauce.

Apple Pie:

  • 200 g flower
  • 1 egg yolk (the yellow?)
  • 3-4 tablespoons water
  • 100 g unsalted butter
  • 1 teaspoon salt and sugar
  • 700 g peeled and sliced apples.
  • 2 teaspoon cinnamon
  • 4 teaspoon sugar
  • A small pie pan.
Put flower, salt and sugar together and cut the butter in small pieces and mix with hands until the butter is crumbled. Do it fast, because the less you touch the dough the better (less warm). Add egg and water and make into ball. Put in fridge 30-.60 min.
Preheat the oven at 200*C  and cut the dough in half. Roll the dough out in between to pieces of baking paper to the size of the pie pan. preheat it 10 min. Take it out and add the apples, the cinnamon and sugar. Put the top on the apple pie and bake another 30 minutes.
Apple sauce:
  • peeled and sliced apples
  • 1 dl water or a bit more (it must not dry out, burn)
  • sugar, and vanilla.
Mix and heat at very low heat until it’s a sauce :) . Eat with applecrunch, on top of oatmeal, or just with milk :)
I add the sauce in the applepie… yummy!.

Thermal Cups

Thermal Cups

It’s august and the sun is still not over Denmark, and probably won’t be either, so I decided to buy myself a thermomug to keep myself warm during work outside on the boat, given the 13-15 degrees and wind we have.

Normally I’m NOT a huge fan of Bodum mugs, because it’s such a typical danish design, and I just imagine myself as a typical danish mom with rainboots, rain coat, back pack and bike with a child seat- and a Bodum cup.

To not put myself in such a position, I never go to Imerco or Inspiration shops because they have everything I don’t want to be, and they have Bodum of course. So I’ve been avoiding that all around (Bodum, Rosendahl, Menu, Zone, etc) because it’s what all danish people get for christmas or buy if they want to be “above the usual”. But that’s just what they are.

Well enough criticism.

I stand in a shop (not imerco or inspiration ;-) ) just wanting a thermal mug for my tea, and my mind wonders back to America to all the cool and amazingly cheap mugs that you can buy at the grocery store like wallmart, k-mart or meijers. So why don’t we do that here? No right, the country is too small.

But this little store is having a bigger and bigger place in my heart, because they have what I need, everytime! So they have 4 types of mugs that I think could work for me. I choose two. One because of its color, and the other because it’s completely water tight, so i can jiggle it around in my purse. Both prices are ok, 30 and 70 DKK.

Well both of them are Bodum. I surrender.

Next step in my personal skillbook is to learn how to drink from these without always burning lips and tongue.

HJÆLP! Jeg kan ikke bage boller?

Jeg elsker bare duften af nybagte boller, og elsker at stå og jongelere med mel, sukker æg osv… MEN, for mig mislykkedes det altid og de ender altid med at være nogle flade hårde/tørre boller, og jeg kan aldrig få ligeså mange som der står i opskriften.

Hvorfor?

Jeg vil jo så gerne… *snøft*

Onion Soup

Ok, so it’s the end of July, the sun has been “burning” all day, and the best possible dinner I can come up with is a good old traditional french onion soup. Not quite the traditional summer recipe, but that’s what I wanted and fortunately I had some dry bread, and some cheese left over, leaving me a dinner for 2 for about 1$ for the onions.

Who says you can’t live for under a 1$ a day???? ok joke… I already spent like 20 bucks on various other items including an ICEBLEND espresso coffee at something similar to starbucks. (Baresso)

Here is the recipe if you’d like to make a simple and very cheap onion soup for 2:

  • 500 g Onions
  • 2 Cloves of Garlic, chopped finely
  • 1.5 L Water
  • Fresh Thyme or Rosemary (whole)
  • 2-3 Stock Cubes (Boullion)
  • 1 tablespoon Olive oil and a bit of Salt
  • Old (or new ..) slices of bread or toast
  • 150 g Grated Cheese
Slice the Onions and fry them with the garlic in a bit of olive oil till they are soft and brown in a big casserole. Add water and thyme and make boil with the stock cubes. Salt as necessary. Put Cheese on the sliced bread and heat in oven at 220 *C for 5-7 mins or until light brown and crispy.
Put the bread into a soup bowl, and pour the soup over the bread. Enjoy!

NEW CATEGORY!

Today,  I added a new category: “baby” because I’m so lucky to be pregnant.And I’ll just share with you a picture of the pregnancy test (that I peed on lol )

My due date it March 13th 2012.

Then I read my horoscope and find everything to match perfectly except the last part about sex…

Anyway so today I’m in my 8th week, and I had the first nausea, which I was happy about… erh not really. Serge (the man/father/boyfriend) keeps teasing me because I panick if something is not according to the book; the symptoms for example. Well well. Now they are here and I must live with them. I am just looking SO much forth to see the little fella for the first time!…

I could write pages already. But I will… gradually.

Another Round

I did it again. Well a little longer route, but it was awesome through urban area, country-side, forest, lakes, ocean, back into urban life again! AWESOME. Next time I will have to find another route, but I have to figure out a way of getting out of the urban area, really quickly and still stay within 25 km of home. Help?

Baby Blanket

SO I had some yarn leftovers from my mom in the best Merino Baby Wool, so what else to do than start the new project and I hope I don’t run out before its done. I’ve divded the colors up so that the colors that i have much off i use a lot, but maybe I end up supplying more at the end. :)

The work is just a basic granny square of dc continued, going around the corner with 2dc in space 2ch and then another 2dc in space, and then 1dc in every dc.

But I switch color at the end, at the slipstitch and then chain 3 with the new color.
